My intent was to buy string beans.

Instead, I walked out of the farmstand with chicken, two dozen eggs, some fermented coconut yogurt (totally weird by the way), fresh basil, and the most beautiful bunch of sunflowers perched right next to me as I type. Pretty hues of espresso, golden caramel, and burnt yellow compete for my attention.

I also walked out with the best impulse buy ever: a pint of baby heirloom tomatoes….

I spent the majority of the afternoon slicing red onions.

The plan was to caramelize them, but the late summer heat crept in so fast I didn’t know what to wipe away first; the tears streaming down my face or my forehead.

And then the phone rang.

It was my dad, inviting us to the beach.

At that moment, I realized caramelized anything in 800 degree weather sounded just as exciting as filing taxes.

So, I grabbed a few juicy tomatoes and made this salad to enjoy by the waves….

last minute vegetables

It was 5’oclock by the time I realized what happened.

After driving around all day, running errands in preparation for our family vacation, I forgot to remove my CSA vegetables from the car!

I was pretty sure everything would be wilted and ruined. It was only 8 million degrees outside.

But surprisingly, the veggies held up which is a good thing because they needed to be used up before we left. Just add that to the never ending to-do list.

So, I took a break from what what needed to be done to let out some much needed steam in the kitchen….
