The lovely people from Pacific Foods sent me a variety of organic, dairy free beverages to sample. Among them was a vanilla flavored almond milk that I’ve never tried before. Surprisingly, I liked it!


I have to be honest with you- I’ve always been a little skeptical about almond milk. The first time I had it, it was straight from the carton, warm. I know. Obviously, I had no clue what I was doing and never tried it again (total misjudgement on my part). But when a vanilla version showed up on my doorstep, I gave it another chance. I envisioned an icy cold smoothie with hints of peach and raspberry. Would it be any good? This time I would bring in my pint-sized 4 year old for a second opinion. He keeps it real.

We blended up some white peach smoothies with raspberry and banana. The pretty pink liquid was poured into glasses and gulped down with gusto. Right then and there I had my ‘aha’ moment… it was delicious! Dillon approved too. The almond milk was subtle and nutty with a hint of sweetness.

Pacific sent me this cute little 4-pack of organic vanilla almond milk. They look just like juice boxes, straws and everything. They would be perfect for school lunches or to take to work. Use them to make this recipe or simply enjoy straight from the carton, chilled of course ;)


  • Depending on how ripe your peaches are, you can adjust the sweetness with maple syrup (that’s what I use), honey or agave.
  • Use any left over almond milk in cereal, granola, and in baked goods.

Serves: 2
  • 2 c. chopped white peaches
  • ½ c. chopped banana
  • ¼ c. raspberries
  • ½ c. vanilla almond milk (sweetened)*
  • maple syrup, honey or agave to taste (optional)
  • 3-4 ice cubes
* If using un-sweetened almond milk, use any of the above sweeteners to your liking.
  1. Combine all of the ingredients in a blender and process until smooth. Adjust with sweetener if necessary.
